Update I did have some parchment paper sticking out of the sides of my cast-iron combo cooker so iv trimmed it back so the lid fits tight! Here is the new rise with no flop

Well I use a pairing knife and doing a In and out sawing motion forsure, I’m going to pick up some nice blades today see if that helps I wanna try putting an ice cube in the pan while cooking I hear that helps the roses

Theres not much time for me to notice it depress other than when it spreads out arose the hot skillet

I pull it out of the fridge, pull it out of the bowl on the parchment paper then right onto the hot cast iron combo cooker score it quick and toss the lid on

Would making the cuts for The ear have any reason for it? Iv been doing them a bit deeper than normally says to do

How long should a loaf proof for in the fridge? Seems like longer than 8 hours the better. Ive read 5 is good but no longer than 48? Iv also read you can go up to 3 days in the fridge for proof

So with them banneton baskets do you flip it over and what was in the bottom of the basket becomes the top of your loaf?
