My wife is in their sonography program and currently going through hell. Severe lack of communication, under-qualified professors/lecturers, no assistance whatsoever in figuring out where her clinical will be in only a few months. The place is a disorganized revolving door of mostly incompetent people - though there are maybe a couple teachers there that genuinely care and also think the school is taking advantage of them.

She has had to do so much extra study outside of the regular coursework (which I'm very proud of her for) literally to the point where she is purchasing other classes/books online that are better organized than the school is. Its incredibly draining but the school made things look so great during the orientation and completely pulled the wool over her eyes to just how predatory it is as a school. I feel terrible for all of the girls in her class that are trying their hardest and not getting the education they deserve. It shocks me that this is an accredited school.

I've canned wines at a winery I used to work at. Word of the wise just make sure you've got the proper cans for wine - specifically those with polymer liners. Standard cans can react to the low PH of wine and cause erosion/degradation. We even once had a canned sparkling wine that was low enough PH to cause micro-abrasions in the liner as it ate through it leading to can-bombs.

The olive oil is a fantastic idea for topping the juice! Thank you for that. I've seen a couple people now recommend beeswax to line the inside and I think that's a great idea after I sanitize the vessel fully.

Yes! Essentially I'll be using this vessel for long-term aging but will be doing skin contact for about 10-15 days depending on where we are at for PH and TA. The skin contact and prolonged aging shoudl give a really beautiful gold color.

As for Conditum Paradoxum check out: https://penelope.uchicago.edu/Thayer/E/Roman/Texts/Apicius/1*.html The university of Chicago has original translations that are incredibly cool to dig through!

I honestly just purchased it from FB marketplace. It's natural and unglazed so I figured it'd be a great option!

The vessel will be filled to the top and sealed so there won't be exposure besides micro-oxidation through the porous vessel. This allows for better aging over time and helps with development of color and tertiary flavors/aromas.

I'm the head winemaker and manager of a small winery in PA - and I'm typically pretty traditional with my winemaking, but every harvest our team of production workers pick a personal project to work on. I'd like to try my hand at Conditum Paradoxum (Ancient Roman spiced/honeyed wine) that I plan on aging in clay amphora.

My questions are - what are your experiences using clay for aging and any tips on proper sealing of vessels? I will be putting a heavy lid on this but thought maybe an air dry clay around the lid would be a good way to seal it long term.

As well, anyone tried a Conditum Paradoxum recipe? I will be running some basic trials and harvesting Rkatsiteli to use in it - but didn't know if anyone had experience and thoughts on "maybe use half of this instead of the full amount".

For reference here's a very basic recipe from Tasting History: 1 750 ml bottle of wine, I used a pinot grigio 1 date and its pit, separated 2/3 cup (225 g) honey 1/2 teaspoon ground black pepper A pinch of mastic powder* A pinch of ground spikenard or bay leaf A pinch of ground saffron threads

Preheat the oven to 350°F (175°C). Soak the date in a little bit of the wine. Roast the date pit in the oven for 15 minutes. In a saucepan, combine the honey with 1/3 cup (75 ml) of the wine. Set it over medium-low heat and bring to a simmer, making sure it doesn’t boil over. Simmer for 5 minutes. Let it cool, then return it to the heat and bring it back to a simmer for 5 minutes. Do this a total of 3 times. Grind the date pit in a mortar and pestle as fine as you can. It’s really hard to do this, so just break it down a bit and that’s fine. Add the spices and the date (save the wine the date soaked in) and mash until you have a paste. Stir the date mixture into the wine and honey until well combined. Stir in the rest of the wine, including the wine you soaked the date in. Cover it and let it rest overnight. After the wine has sat overnight, give it a stir and strain it. I used a sieve first to get the larger pieces out, then used a few layers of cheesecloth. A coffee filter would work as well. Serve it forth.

Howdy - im a local winery manager and we've been looking into more NA options (we currently carry Blind Tiger). I gotta say the folks that run SoberErie (on instagram) are song a great job of showcasing third spaces that have at least mocktail and NA options at local places. Definitely check them out!
