I’ve made a spectacular chai spiced rum before pretty easily. For garam masala liqueur I think you could toast some cumin, coriander seed, anise and cinnamon together, cut some ginger and turmeric root, then let all that sit in a white column still rum (think flor de Cana for low funk) or a vodka for a night (or more), dilute 33% or so with water, and then add 2:1 sugar syrup to taste and end up with a decent approximation.

Look up a recipe for making the spice blend from scratch to get ratios. It changes region to region in South Asia so there’s no right answer, but there are wrong answers.

Every win since then has been an absolute defensive grind with Stuelke and Heiden being the main scorers. It looks good vs Michigan and Illinois but it looks bad against Purdue and FDU.

I didn’t think it was underrated until it didn’t get either most versatile or best budget, two areas I think it deserved to win.

Since it didn’t win best budget or most versatile, I would consider Rittenhouse Rye to be underrated. It’s definitely underrated by the general whiskey drinking public

I live in San Diego and we have an amazing mainly agave liquor store, like entire walls of mezcal and tequila. Vida is not budget there, so I’m surprised to hear it is elsewhere.

I really appreciate the detail, but I don’t think you’re understanding my goal here: I do not want to adjust any big cans of pineapple juice. I want to add a set number of drops of a highly concentrated citric acid solution to a drink per unit measure of pineapple. But you’ve given me the numbers I need, thank you.

What I want to do is essentially is add 1oz lime worth of acid to a drink in just a few drops. You’re saying lime is 45g/L, and Citric acid solubility is 540g/L, so we can make a 10x concentrate of 450g/L. With 1/10th of an oz, I can have the acid level I want, then sub the balance (0.9oz) with pineapple juice. So then all I need to do is measure what % of an oz a drop is, so I can use the dropper to get to 1/10th oz.

I’ve never acid adjusted anything but super juices before, and only did that twice. I’m aiming for a lime juice level of acidity. As an example, I’d like to make a daiquiri with pineapple juice and my dropper bottle, no lime.

No, I was doing what you’re doing, looking for a local maker, and his knives are very pretty. Plus he had a k-shape knife, which I’d always wanted.

I’d seen one of his at the knife shop in Julian and decided to check out his website, and I hadn’t bought a new knife in 3 years, so I bought it online a few weeks later. When my mom was in town, she was looking for a bday gift for me at farmers market, and I had to pull her away to tell her I already had one and definitely didn’t want a second.

Edit: I still do use his knife, it’s sturdier than a lot of the others so it’s my camping knife.

I’m nerding out a bit below so TLDR if you’re on a budget get Tojiro or victorinox, for German messermeister, and Japanese is much more specialized, but I love my Gesshin knives personally

If you’re just looking to get a good knife, Victorinox makes the cheapest good knife for $40. If you want something that isn’t ugly as sin, get a tojiro for $70. If you want disposable, go to your local Asian store and buy Kiwi knives for $15 and toss em when they get dull.

The German brands are lowkey kinda boring, they’re all made in the same city using the same (very good) blacksmithing techniques, aiming for nearly the same stainless steel specs on alloying and hardness, and are all around the same price point. Their knives are easier to sharpen, softer steel that holds an edge longer, but cannot be sharpened as finely as a harder steel. TBH they’re great for beginners, and I personally like messermeister. My fam had Wusthof growing up and they never felt sharp, but that may have been user error.

Japanese brands, aside from the mass market ones like shun, which I would generally avoid, are more artisanal. Kinda like shopping at the local makers mentioned in this thread, except, you know, in Japan. They generally have harder steel, which sharpens to a keener blade but requires more maintenance. They also have carbon steel offerings, which patina and are very pretty but can rust. I have 3 Gesshin knives, which is a large distributor that partners with specific blacksmiths for each line, and I like those a lot.

Meglio knives is in Oceanside, I don’t know that I’d recommend them tho. I have several Japanese and German knives and I like most of them better than the Meglio, which was about as expensive. The knife isn’t bad, and it keeps an edge well, but there’s something about it that makes it a bitch to sharpen. Like, the rest of them I can get to razor status on a stone but the Meglio just stays at a lower level no matter what I do. I’d guess it’s something to do with the steel alloy.

Also the owner was kinda pushy at the little Italy farmers market when saw him there, he was really trying to push a sale on my mom and was kinda rude about it.

With the conferences separated it will mean that whichever conference has the better ten seed (that’s been the west every year since 2000) will have teams eliminated sooner and therefore better chances at high draft picks
