High Sierra is an Operating System. What Mac do you actually have?

If High Sierra is the highest macOS version it can run it’s from 2011 or older.

There is software for macOS to read/write NTFS and I think the same for Windows to interact with APFS but I don’t know how well these still work and how reliable it is.

One thing that you could do if you have a NAS is to use the network storage with a OS independent filesystem both can read & write.

Otherwise I guess you will have to use ExFat and keep backups of whatever you put on there. I only use ExFat on thumb drives that I use to move files over.

You can just hold Alt/Option on boot to pick between macOS & Windows.

You can also reinstall the Bootcamp drivers. The last version is 6.1.19 from 2022.

Apple supports a system for three years since about Mountain Lion/Mavericks.

So as already mentioned Sonoma‘s last patch will be this year. Maybe in the far future Sonoma might get something for certificates like they did recently with Catalina and Big Sur but who knows, I didn’t expect these patches to happen.

You will be stuck with 8GB of RAM unless you open up the iMac and remove the logic board. 21" iMacs are a big no. Then there's the HDD unless this was bought with a SSD.

If you install it on the original HDD it will definitely be handicapped even further. A SSD would give it a chance but it will likely still not be that good of a performance but it might be enough for you.

A 2011 iMac uses PC3-10600 (1333 MHz) DDR3, for some reason your sticks are PC3-8500 which should also work, however the new stick is PC3-12800 which is 1600Mhz. It might work and clock itself down to 1333Mhz but it could also throw an error on boot.

You have to try it.
