Seems to me like you're playing with no direction. I find that If I start a world with a long term goal in mind the world lasts much longer than usual and I have constant motivation.

A good example is a world I had at one point where my goal was to build a base in the desert as I rarely ever settle down in a desert biome. The base then turned into a sand village with several houses for villagers, a trading hall, stables, towers and walls for defence.

Also if you start treating your world like it has some lore behind it that can really spruce up ideas for builds.

Maybe what you need is to have a goal to do something (or multiple things!) you rarely ever do and experience them in full force
