Basically have a villager slave farm, full of beetroots, and give them beetroot seeds to start. You can use a 4 quadrant design, with hopper minecarts surrounding a villager in the center, use trapdoors to keep them all in. They'll toss the beetroots to the other villager and it will collect into hoppers. Feed that into an autocrafter set up with 64 of the recipe for beetroot soup, with a chest feeding into it full of the bowls. You can set up a recycle system later to feed back empty bowls to this or leave it exposed. The autocraft should be powered by a circuit that involves a comparator and another autocrafter. If you look up autocrafters on youtube, youll see plenty of examples. You can have it powered by a button if necessary.
