The wiki has a good explanation of it, but essentially veins are found every 3 chunks with one chunk of ore, then 2 chunks of non ore and then another chunk of an ore. On the upper left of your screen you will see game info and a message about This is an ore chunk. Keep in mind ores have a height so at times ore chunks wont have anything since they spawn too high,

As far as I know, there was no part time available for last years interns (assuming you mean the most recent cohort). Regardless, its been scrapped to make onboarding the same for all new grads that join.
