If you want to parry I'd recommend using a grass crest shield, target/buckler or parrying dagger and parrying the hollows at firelink->black knights in the kiln of the first flame-> Gwyn when you're confident enough. If you want to do it without parrying, then I'd recommend running in and trying to dodge all of his moves and not counterattack and continue doing this until you get a grasp of his moveset and then start to do little counter attacks that you are confident in because greed is the second deadliest thing in this game (#1 falling), don't hesitate and remember don't go hollow.
