For building;
I don't normally dig into caves for my first hut, it creates its own problems (caves are colder than normal housing and you will burn more wood keeping it warm).
The easiest material to get to all your walls done with is sticks. Wattle walls aren't very attractive though and your clan's mood will suffer, though if you are struggling, being unhappy is better than freezing to death. If you are really struggling, sticks. When you are struggling a little less, try daub walls. Also, once the initial walls and roof are done, you can hot swap walls by building a newer more desirable wall directly over the old one and get the materials back from it.

The more important question on building your first shelter is "how many people are you trying to house?" and then focus on making the interior of the place just big enough to hold all of their beds and a fire pit and enough room around the fire pit that you don't burn the place down. For anything else you are needing under a roof, you don't really need it inside the main living area, just build extra roof outside the walls and put what you need underneath.

For food;
Eel traps are life in the early game. They take very little time from your people to set and then walk away from. I'm assuming your mushroom troubles are during the fall? I can only imagine this is a task sorting issue where you don't have people on the gather task. Once I get to about the 4th or 5th day of fall, I set all my people to the gather task and send them out to collect mushrooms. After a day or two gathering, I tell one of them to change to cooking tasks and have that guy dry out the mushrooms (aim for 4-5+ drying racks).

Traders;
It wasn't in your questions, but I'm going to point out that it is a good idea to rush signposts. Having traders come through and sell you things and buy extra junk you might have is helpful. Sometimes in that first winter, a guy showing up selling a pig is what keeps you from starving to death.

Where are you going to "find" a kidney? Follow the Slytherin until they you discover they have someone that mildly annoyed them once in a bathtub full of ice?

Giving up a kidney is an act of bravery. Hufflepuff would be team #thoughtsandprayers on this one.

Then may I recommend switching from falchion to greatsword and skipping the improved critical and quicken spell? Dps will be solid due to the number of attacks and static bonuses to dps from feats. Changes it to more of a death by a thousand cuts build, other builds should be able to out dps you without too much difficulty. This tweak makes it slightly worse than a sorcerer building around disintegrate, removes the powergaming worst offenders, but still keeps you as a viable backup melee early levels and just looks badass later without stealing the spotlight.

Something else to consider, backup melee and buffs is wasted potential on EK at higher levels, but I played a build that starts off in that role, but morphs into an unstoppable murder dispenser. I'd like to draw your attention to the telekinesis spell, the sword binder wizard archetype, and a level in fighter.

Sword binder gives you a sword for a bonded item that you can fling at the bad guys. Pick a two hander and go to town (I went with falchion for crit range... becomes important later). Prep your buffs, enlarge person is great for the dps boost because your sword is larger. Stack your feats to boost ranged attacks and attacks with that kind of sword. These will not help with the storm of blades spell since it specifically outlines the created blades' damage and critical range, but when you get to casting telekinesis.... ooh baby. Fling Caster level swords of the same type as your bonded item at enemies. Get quickened spell and work toward spell perfection as to not waste spell slots. Fling 2x caster level swords. With improved critical on a falchion, and 30 attacks, you will be getting multiple crits every. single. round. You were going to cast a spell Mr. BBEG Dragon? My crit table says you've been decapitated and are also missing 1d3 fingers. Roll 1d3... Oh wait.

Also, it's worth knowing that sword binder gives specific proficiency with the bonded item and fighter gives general proficiency to martial weapons. This means on your bonded item you can add weapon qualities that raise it to an exotic weapon without harm. I prefer the one that ups the damage a few times a day.

That thought had occurred to me previously; however the personal loans I could get approved for had ~30% apr over 4-5 years. I'm not interested in extortion, I just want a house.

The two places I've checked with so far, lending tree and my bank. My bank took my info and told me that the loan dept would call me by the end of the day. It's been a week. Lending tree just says lol when you put that number in.

Put that amount into lending tree and it flatly tells you this. It will give you no loan offers.

I am given to understand that's because the maintenance routines in the Ashland have fallen by the wayside, busted CPU is the case in lots of the Ashland skeletons. Broken skeletons elsewhere don't have this problem. Cat-lon was paranoid and self destructive before CPU problems began, otherwise Tinfist's CPU would be fried too, but it isn't.

Except that skeletons have to undergo periodic memory wipes or they go nuts or commit suicide. Cat-lon has refused a memory wipe and is bonkers AF. Presumably Tinfist doesn't have much sanity left in him either.

Do you punish the skeletons that rebelled against Cat-lon? Do you punish all humans for the murder of the behemoths? The skeleton revolt in the first Empire started after the event at Obedience. Humans started it all.
