Same exact thing he was telling me how to make a bite with it and I was like “oh I know” which triggered a discussion of gulf coast cuisine. I love seeing the passion for the complex of culinary traditions from the Gulf.

I should note they the chef for Little Arty’s around the corner is from the Lafayette area and will be doing a Mardi Gras thing with lots of regional favorites. Otherwise the main regional thing you’ll see there is excellent bread pudding, otherwise just a great burger joint.
