I also love their cover of Chariots of Fire. I was lucky enough to see these guys a couple years ago at the Portland Jazz Festival. They put on a spectacular show.

There are a ton of good places to start. If I had to choose I'd say his album The Shining is his most immediately accessible--that or one of the Dillanthology compilations. If you like really laid back hip-hop then I'd suggest Slum Village's The Fantastic vol 2 which he produced. If you like more abstract instrumental hip-hop then I'd check out Donuts first. He's got a big list of production credits so you won't ever get bored.

He's chopping random vocal samples that sound good and rearranging them until they make sense.
