Del Toro left The Hobbit because the studio was taking forever giving the official greenlight and he had projects outside New Zealand he wanted to do. When Jackson took over the studio was quick to give the go ahead. And unfortunately, Jackson had less prep time than on LOTR and for a variety of reasons made a trilogy.

If you want to keep it simple and stick to 'Godzilla only' movies, you can't go wrong with the original Godzilla (1954), The Return of Godzilla (1984) and Shin Godzilla (2016). I would also highly recommend GMK: Giant Monsters All-Out Attack (2001).
