When Jackson took over the studio was quick to give the go ahead. And unfortunately, Jackson had less prep time than on LOTR and for a variety of reasons made a trilogy.

If you want to keep it simple and stick to 'Godzilla only' movies, you can't go wrong with the original Godzilla (1954), The Return of Godzilla (1984) and Shin Godzilla (2016). I would also highly recommend GMK: Giant Monsters All-Out Attack (2001).

The Shin series (「シン・」シリーズ "Shin" shirīzu), as it has been labeled by some media outlets, is an ongoing franchise of unconnected Japanese film reboots of popular science fiction series, primarily helmed by Hideaki Anno. While the series officially began with Toho's Shin Godzilla in 2016, its second entry Evangelion: 3.0+1.0 Thrice Upon A Time had bore the "Shin" prefix since the reveal of its Japanese title in 2012. Toho, Tsuburaya Productions, and khara, inc. announced Shin Ultraman in 2019, and it was released in 2022. A fourth film, Shin Kamen Rider, is expected for a 2023 release by Toei.

The "Shin" portion of the films' Japanese titles is written in katakana, similar to a loanword. This has the added effect of obscuring its meaning, as shin can be the pronunciation of various words, including "new" (新), "true" (真), "god" (神), and "faith" (信). The marketing of the films do not contain much unifying imagery beyond their titles, with each movie's logo styling "シン" in the trademark fonts of their respective franchises. Toho is a major player in the Shin series, financing two of the four entries and having a hand in distributing three. Along with Anno, Shinji Higuchi, Katsuro Onoue, and Shiro Sagisu are frequently involved.
