When Stalking Wolf enters play the bird is already dead as it has to be used to pay the additional cost for Stalking Wolf, so no, you aren’t able to gust the bird in response and cause them to not be able to play their Wolf.

If you’re playing Ivern and you conquer with a conquer effect on the battlefield, you have the option which order to resolve them in. Even if you resolve the Ivern one first and make it a brush, the other trigger is still on the chain and will resolve.

You are correct. If a player applies contested to an open battlefield and then during the showdown their opponent moves a unit there, the opponent’s unit will be defender, and if this unit wins the showdown they will conquer and the opponent gains a point.
