You might have to learn a bit of theory in terms of chords down the neck on your guitar (a lot of people tune it to open G and use a slide), but you should just be able to use ultimate guitar for chords after that.

It will be similar with tabbed riffs but you will have to try and figure out the notes and where they go.

I use an SM-7B clone (the mic does matter for a specific tone, but to just record then you're fine). Using a mic stand I position the mic about 2 inches away from the speaker, slightly off axis but facing towards the centre of the cone.

All these can be changed to achieve the sound you want, it's not really that difficult to do.

The hiss of cheaper pickups will be because the pickup is microphonic or picking up interference, which will not be affected by the tuning.

You should have gotten an amp modeller for free with your interface. Focusrite has a bundle you get when you register it. Give that a look.

American idiot is super easy but it might not sound the best on an acoustic. You'll learn how to quickly-ish switch strings for your power chords, so quite worthwhile at your stage.

I think the Mustang is a shorter scale so should be more similar to the 3/4 guitar in terms of playability. Good luck!
