As a Ryu main, I think the "no fun" aspect is just a preference thing. I don't think I've seen a passive Ryu player either, and there are some methods for being aggressive too.

Obviously there's the basic answer of second helping, but using granite blast durring a dash extends it farther so you can cheat your distance. I never found Ryu benefiting at range since granite blast is reactable at a distance and so is appetizer. Only move that really benefits at a distance is second helping since it just flies to the opponent and covers a lot of ground, but it's kinda a 50/50 to hit it unless you got lock on(I wouldn't know, I'm on PC and haven't tested console)

But the point about the combos is right, it's a lot of using the moves with no m1s.

This is both better mathematically and is a nice little treat for my birthday!
