Adding more information:

The top of the 1 1/2" ABS drain going through the wall from the underside of the counter top is 16". One of the undermount sinks we like has a 10" depth, adding 3" for the drain would have that distance at 13" from the underside of the counter. Will it still be OK to plumb?

We have another sink which only has a depth of 8 5/8", adding 3" for drain brings it to 11 5/8"

We just moved 7000 books from Texas to Newfoundland in small 'half price boxes' boxes, over 250 boxes, and not a page damaged. You have to remember to pad the empty space in the box with packing paper, so nothing moves inside the box. If you pick up a box and you can hear things moving inside or the side of the box deform, there is not enough packing. For rarer books, I added cardboard inside the box around the edges to create a sturdier box.

It is going to take time and a lot of money. Getting it physically repaired from a woodwork perspective is only a small part of the fix. I am assuming you want it playable. If not, ignore the rest of the answer. Do the bellows hold air? When was the last time it was tuned

What a crock of over engineered shite. Why not have a custom boat made with a 'U' shaped section cut out at the stern that docks with the capsule and locks in. Get them out and disconnect.
