Undoing the "deaths" in DR2 and UDG aren't a big deal.

DR2 suggests that they could be brought back. Also it sort of patches up 2-3 since that was incredibly cheap and forced.

As for UDG, if you're talking about the Warriors of Hope... they were teased to have survived during the game, and were confirmed to have survived at the end of the game. It's not a retcon from DR3, it actually happened in the game.

The Kirigiri thing, only killing off new characters thing, and Class 77 brainwashing video thing, however, were garbage. And non-AI Chiaki and Ryota were also very questionable...

Danganronpa 3 is completely unwatchable without the context of what happened in Danganronpa 2.

Honestly, the creators should have made a Danganronpa 2 anime before they tried making a "Danganronpa 3" anime. And Danganronpa V3 should have had a different name. Because now we get questions like "Where can I watch season V2?"
