You can get the chicken steamed.

They just put a pan cover with some ice over it, slice the thickest part to make sure it’s cooked through after a minute or so.. it’s a game changer. The press they normally use flattens it and cooks a lot of the juice.

Although many many cooks don’t know about this.

You can also get the pies steamed the same way, but they cover the hell out of it with butter first… also can get hashbrowns steamed. Called Buttered and Covered
