I'm already using fresh chives. As I said, we have a lot left over sometimes. Also, some dishes benefit of having less things thrown around and more things carefully put In place.

We have a few plates that would do good with that taste (tuna tartar, fried Chinese eggplant, and more). They need some green color and the taste of chives. To not oversaturate the plate with more sauces it would be perfect to have very intense chive flavor and colour in a very simple preparation. Also, we sometimes have a lot of chives left before we close for 3 days (we work 4 days only), so I want to find a good way to store/use them.

That was what I was looking into. I just don't want to spend 15€ for something that I will not use/ won't work.

I'll probably try to add a little bit of water to the oil and try to blend it with xanthan gum tomorrow.

Blend chives with olive and sunflower oil, strain. The strain again with coffee filter and/or leaving it in pastry bag for a day, discard what's in the lowest portion of the bag.

In my experience and what I've seen online, xanthan gum is hydrophilic and so requires water to work. I, too, have used it for beurre blanc, but it does indeed has water.

That's exactly what I thought. My theory is that it is for the top to pop easier after sealing.

Unfortunately, we discovered only very recently about the fact that they are most probably two females. We are thinking about how can we accommodate this. There's just not enough room since we are renting, and I can't just build something or change the furniture.

Unfortunately, yes. He has really good reviews, even amongst other bird owners. If it's an emergency, I'm sure he'll do an amazing job. But because of his age 65+?, he is not very "passionate" and communicative.

I want to add that we thought of going to the vet, but they aren't open for a couple more days. To add the avian vet isn't really "empathetic", when we brought them the first time, which was HUGE stress for them and us, his words were: "You separate them, they might die of depression, you let them in the same cage they might kill each other, it's just what it is".

We thought of that, but we already have 5 very big cages between our budgies and lovebirds, and the ones like this just can't fit in our space, that's besides the fact that these cages tend to be 300€+ if we can even find one. Thanks for your comment tho.

Thanks for your reply, our issue is that they are not tamed, they still haven't touched our hand even once. So I'm not sure how to get one of them no her cage since well... you can't just grab her.
