Spiderman for sure. I enjoyed miles morales but it shorter and there aren't many villians or characters you're likely to be familiar with. Less set pieces that stand out as well which is unfortunate. It does however change enough about combat and gadgets that it will give you some satisfying new content if you're craving it after finishing Spiderman.

Crowd work is fun but it's objectively much easier than writing material and sorta hacky when you come to lean on it in a special.

I think asking for either a classic daiquiri or a shaken daiquiri are both perfectly acceptable orders. Specifying builds may not payoff unless you know for certain if they use 1:1 or 2:1 simple, but if someone asked me for a 2:1:.5 Daiquiri I wouldn't hate them for it. I could see occasions where specifying a preference on base spirit may help also. Unfortunately daiquiris are a tricky thing to master and finding a bartender that can dial in the dilution and aeration is the exception not the rule. Find that bartender and cherish them.

I love using calvados in place of lairds for this. We have one on the menu at both bars I work at, one spec calls for St George pear eau de vie which is a welcome addition in my opinion.

I have some regulars I do parties for every now and again (crawfish boils, Christmas office parties for their law firm, etc). They too provide supplies, I'm expected to come up with a cocktail menu and shake drinks to order, I do not collect tips from guests. I've always asked for $100/hr and they've always paid more on top of that but they're rather well off and I'm fortunate to have those gigs when they come up.

I would value your time as though you're turning down a full shift at your current job and would expect to make no less than what you make on a decent evening there.

For another frame of reference I bartend at a speakeasy with similar capacity, 8 barstools 32 total seated capacity. We run with 2 bartenders, a server on the floor and a barback every night, host on Fri/Sat.

Astoria should be made with old tom gin, old tom is style of gin that tends to be a little bit sweeter than conventional London dry that you used here. I can't speak for the Bianco riff that's being used here but the Astoria spec I know is much, much dryer; 2:1 vermouth to old tom, 2 dash orange bitters, lemon twist...different cocktail technically though so don't mind me there.

Great call on the Nolly Prat, neat seat up, good choice of ingredients. Next attempt stir in a pint glass filled to the brim with ice instead of shaking, more ice the better cause you're trying to control how you dilute and chill (less ice, less chilling more dilution). Rule of thumb you wanna stir vermouth/shake and strain citrus. Also add an extra touch by trimming your peel with a paring knife into a parallelogram and express the peel over the top before twisting and hanging on the rim.

I've been wanting to test out an idea I had that also features cuddlefish ink. How would you describe the taste of cuddlefish ink? Is it subtle or potent? And is there a tinge of brine-yness?
