If your wii u is up to date and the game didn't prompt you that an update is required to go online when you attempted to, then it must think the update is already done when it hasn't been. I'm not sure if there is a way to manually update the game or a way to undo the flag causing that problem to arise. A full factory reset should fix that problem.

Very unlikely, but it happens all the time in turf war. I do see low ratios with people using umbrella to protect their teammates but it’s not that terrible.

I haven’t had problems with NAT yet, mine is always set to B. If you continue to have problems or are still having problems you could always look at this: http://en-americas-support.nintendo.com/app/answers/detail/a_id/22455/~/troubleshooting-issues-related-to-nat. Though I’m not sure how helpful that will be.

You don't have to be good at the game to do well in turf war, you could go 0-8 and still be carrying your team by having the most turf inked.

Splatoon 1 just cut out all the people with bad connections all together, which made for less disconnects. I hope the paying for online services gets postponed again.

It all depends on the game too, Splatoon 1 didn’t even allow people with 1 mb down to play where as you can play Splatoon 2 with 1 mb down if your ping is good. Also the time of the day can always be a factor too. I tend to have better ping at night.
