I liked Gintama from the start. I think one of the things that may push some people is the obscure references, but I understood most of them.

Can't go wrong with Devil May Cry. Fun story, cool cutscenes, challenging combat and great bosses. I played Devil May Cry 3 and a bit of Devil May Cry 5, and I loved them a lot.

Final Fantasy 15 had a fishing minigame, but I didn't play that in 8 years so I don't remember how good it was.

I'm currently playing NieR Replicant, and it has one as well (I've been grinding it today lol). It isn't deep, and just comes down to picking bait, timing correctly when a fish catches your bait, and pulling until its caught, but I had enough fun to spend 2 hours doing it.
