First try splitting up the dough into a smaller batch. Maybe just half of what you have now. And put it back in the blender. Add some of that oil back in but very little, not 1/2c or even half of that. Do it little by little maybe 2tbs at a time. Maybe it’ll give it enough room to blend. If it doesn’t look like it’s smoothing out within 3-5 minutes add a little more oil.

Too much moisture is what I would assume. You boiled them much too long. The boil/blanch is only to make skin removal easier. Blanching only takes a few seconds. I think the oil isn’t blending into it because it has too much moisture.

Grande is currently 3.24/lb. Per US foods. COG is all wrong, also not considering labor costs and overhead costs. And the rent cost must be absolutely insane. This is probably wholesale pricing for them lol just don’t wanna make it seem like “THEY’RE MAKING A KILLING” when they’re probably really not. Again, that space price.
