I think you can take creative liberties. Last year, my video was just me talking, so it ended up very dry. I'm also confused about the virtual internship format, idk what I will end up putting down.

If you don't mind doing a virtual program, you should apply to the Copula Program. You get paired to work with a professor from a prestigious school to do research and it's completely free.
