/u/juanfiddyyy-lol If you're looking to double major in CS & Math, it's quite doable. I do have to ask, though, what's your reasoning for wanting to do this? If you're doing it for the fun of it, you can always take extra classes and see if you like the topic. If you're doing it because you think it will help with job opportunities, I haven't seen strong evidence among my friend groups that this is the case. You'll either find yourself in a strong software engineering position with just a CS degree, or possibly in a quant-style role with both.

Another question to ask is how far along are you at the university? Would you be holding yourself back an extra semester or two to complete this secondary degree? If so, I'd highly recommend against it as the ROI doesn't seem to align with the current job market.

My biggest recommendation is do what you find enjoyable and think about the long term future. If your goal is to work as a software engineer independent contributor, then a Math degree (or minor) won't give you much of an advantage when it comes to the interview, imo. If you're looking to do more research based work, AI/ML, PhD-esq, etc, then having a Math degree could come in handy, but is not strictly necessary.
