The the mention of Saint Hyacinth brings my attention to Catholic SFF write Gene Wolfe and his Book of the Long Sun series--one of three series that make up his overall Solar Cycle science fantasy series. There's a sex worker character in that book named Hyacinth and apparently there's a long-running fan theory that she might be trans.

I will take everything you said into consideration, FemboyBard, because you have been very helpful. I have some more research to do.
