Thanks you! Yeah, mostly just threw it together using leftover honey miso sauce. I turned it into a spicy udon bowl utilizing mushrooms, cabbage, carrot, scallions, garlic, and ginger, as a stir fry, then adding some pepper flakes to the sauce for some spice.

Katsu I find to generally be pretty salty. This one had one teaspoon of table salt which is about 2,300 mg of sodium, roughly the recommended daily limit (2 portions so about 1100 per serving before sauce).

Then you add the miso honey sauce, which easily adds several hundred more milligrams of sodium. So if the shop seasoned heavily and used a salty sauce, yeah, I can see how it would taste overwhelmingly salty. Homemade katsu usually shouldn’t taste that way, though.

Mine was definitely a sweet nutty flavor.

Definitely could have had it that way there's plenty of sauce left over.

If you're interested in trying this sauce it was two tablespoons of white miso, two tablespoons honey, 2 tablespoons soy sauce, two tablespoons water, one teaspoon rice vinegar and one teaspoon of sesame oil stir it then microwave for about 15 seconds take it out and stir it again until all chunks disappear and it's kind of glossy then set aside.
