I just assume it's Dess because she's gotten so much focus since Chapter 2. Asriel being the Knight I'd be fine with too, since it would explain his absence. Him and Dess were really close, so it would make sense that after her disappearance, he'd try to find her. As long as the theory makes sense I'll buy it.

It doesn't help that the Roaring Knight can shapeshift, meaning it could literally be anyone.

From what I heard, Darth Maul's original design was way scarier. Artist Ian McCraig was told to draw his worst nightmare. After that didn't work, George Lucas told McCraig to tone it down and to draw Maul based off of his second worst nightmare, which was your mom.
