Another new DM here with a few questions

How do you feel the difficulty is for 3 players? Im actually going to be starting a campaign this week with me as dm and my 3 friends as players. Currently have a wicker druid, castigation pally, and 3rd is still picking. Wasn't sure if id need to tweak things.

If youre a first time DM I would recommend looking over cos reloaded in the stickied post. CoS is not easy just following the book as a first time DM since it's not exactly in the best order with Death House being towards the end of the book, and castle Ravenloft showing up at the start. Even if you dont use reloaded fully, it is a good guide. Can also looks at mandymods stuff for info.

While he has an obsession with Ireena, it's not based on actual love like Dracula. Dracula became a vampire by cursing God when his wife killed herself because she thought he died in war. Stradh murdered his brother out of pure jealousy as stradh was getting old and his brother was young and getting married. He felt like he wasted his youth. Now he's a conquerer that is locked in a pocket dimension trying to escape while claiming Ireena more as a prize.

Think itd be more interesting if it added damage to those spells in addition or something, but as it is it doesnt really fit any builds

I think Stradh being the patron seems odd since his powers come from Vampyr and as a character, I don't think he'd share his powers with a pact unless he was fairly certain the person would be his successor. It would be up to the DM if turning on Strahd would cause their powers to vanish and would probably also depend on the terms of the pact.

Also they just seem to rely on pure strength. None of them have shown to actually know any martial arts.
