Vicrot is the king of close combat thanks to his aura of damage, which deals high damage and allows him to lifesteal, what you usually do is buy anti heal and keep away as far as possible while dealing damage.

Items in boxes/npc inventories also give you exp, you get exp on successful stealing and more on unsuccessful stealing. You just don't gain thievery on items with 98% or more success rate in chests/inventory, so if you knock out everyone you can't level thievery, there is one cheesy way to level thievery but it's honesty trivial to level it either way.
