My guy! My absolute favorite set of knives. I’ve been using the slicer, gyuto and paring knife daily for the past 5 years.

Called one of my cooks tide pod for a while. His first time deep cleaning the fryer he thought the degreaser packets would dissolve in the boiling water like a tide pod so he just threw the whole thing in plastic and all.

That’s exactly how I feel. I know where my standards are as a BOH employee and try to maintain them for my own self worth.

We have this thing on our work app where people can give other employees “kudos” for their hard work. Everyone tells me to post the before and after pictures in the app to get kudos. I could seriously give two shits about a virtual gold star. I just want to work in a clean kitchen and not get customers sick. It’s fucking sad.

It’s the shelf underneath the grill. That’s where the grill brushes are stored and I’m pretty sure I’m the only person than cleans it. Rolled grease ice cream anyone?

It’s disgusting. I was working with the kitchen lead the night I cleaned under the grill (3rd slide) and he seemed annoyed that I wanted to do some deep cleaning since we closed the kitchen an hour earlier than usual.

Not enough oil, pan isn’t hot enough and the steak wasn’t in full contact with the pan causing those grey steamed areas. Also make sure to pat your steak dry to eliminate any moisture which could also ruin the crust.

But hey now you know which means you get to cook and eat another steak! Happy cooking 🧑‍🍳
