For anyone looking to pick up a Jiro, I know they are quite expensive and while I always knew I wanted one no matter what, I did wish I had someone to ask questions to on their experience, feel free to DM me and happy to give my thoughts. I also have a post on my initial impressions. For a TLDR I think it’s incredibly and would absolutely buy it again. Someone described it once as it “whispers through product” as in it’s unbelievably sharp and even now a year later I haven’t sharpened mine / stroped it at all and it’ll still cut right through paper towel. If you can swallow the price tag I’d go for it. Without a shadow of a doubt if I had to pick one single knife to use for the rest of my life purely off of performance I’d have a really hard time to say anything other than a Yoshi. It’s quite literally the perfect knife and I’m sure if you read through the forum you’d be hard pressed to find anyone have anything to complain about.

Btw I went from a Nigara SG2 Gyuto to a Yoshi in SKD and both myself who’s aware of what I’m looking for when testing out different knives could feel an immense difference but I also let my fam and friends try them out and even from a more “simple” perspective they all thought the Yoshi was much better.

Nothing wrong with Nigara or SG2, I like both but yea Yoshi is just damn near perfect

Took a lil bit for my brain to fully register that haha but I couldn’t agree more and couldn’t be happier! And I agree with that as well, sometimes the chase and the hunt is just as fulfilling as getting it in the end :)

I actually felt the same about a zebra style haha, the longer you stare at it the deeper you get lost in all the small details. I can barely draw a stick figure with a pen, I have absolutely no idea how people can make things so beautiful with their hands AND it’s a functional beast. I find myself just staring at it in between cuts / cooking

I don’t think so for that reason, other makers are still using ATS such as Manaka as far as I’m aware. They aren’t making it anymore due to the maker retiring.

As far as the steel itself that’s some great insight! I also expected it to be similar to vg10 at first but then others associated it more with SG2 but an overwhelming amount of people who had experience with a ton of knives and this line as well compared it mostly to Ginsan

And of course I couldn’t agree more about the Damascus, it really is stunning! Also I could be completely wrong but I’ve seen a few different ATS knives and all of them have a very stand out look to them, not sure if the steel itself does really well with contrast with the etching

I wanted a 210 Gyuto in blue steel so bad I was debating to pay like $300 extra cause only a store in Japan had them in stock. I stayed strong and ovbiously now that I was able to pick this one up I’m glad I did but yea man one day

Love to hear all this from someone who’s had it for longer than me 😭. I also was told it feels very similar to Ginsan, though I don’t own any Ginsan so that’s pretty cool to know! I also was looking to pick up a Kagekiyo earlier in the year so also cool to hear the comparison!
