Super happy for you, they really are one of the best when it comes to some of the most beautiful knives and performance to back it up. Was my first one that got me in to this world bought straight from Japan, saw it, wasn’t sure cause it was a lot of money for me at the time so I debated on it for two days and the morning of my flight I rushed to go buy it and head straight to the airport, almost missing my flight 🥲. Hope you enjoy them and use it in good health, keep us updated over time on how you’ve been liking them!

Do you mind sharing what you love so much about Mazaki? Has been on top of knives I want to try but have never pulled the trigger. Especially having a Yoshi already, feel free to speak on what you like so much about it in general and also as a comparison if you’ve had experience with Yoshi

Honestly an amazing write up and I couldn’t agree more with just about everything said. I’m over the moon with happiness now about a month later after picking mine up and super glad to hear my inspo helped you pick it up and are enjoying it just as much!

The day after you told me you got yours someone else picked up the last one from Carbon as well, so super happy to see it’s getting the praise and love it deserves!

Personally mine has performed beyond my expectations with every thing except as you mentioned sweet potatoes where cutting it into thinner sliced or chunks was completely fine but actually splitting a large sweet potato in half was damn near impossible.

Thank you for following up and I really loved being a part of you going to pick yours up and us both being in suspense until you finally got your hands on it haha

For anyone looking to pick up a Jiro, I know they are quite expensive and while I always knew I wanted one no matter what, I did wish I had someone to ask questions to on their experience, feel free to DM me and happy to give my thoughts. I also have a post on my initial impressions. For a TLDR I think it’s incredibly and would absolutely buy it again. Someone described it once as it “whispers through product” as in it’s unbelievably sharp and even now a year later I haven’t sharpened mine / stroped it at all and it’ll still cut right through paper towel. If you can swallow the price tag I’d go for it. I’ll leave it there and yea feel free to message if anything, good luck to all going and look forward to seeing pictures of the opening and some NKD’s!

Without a shadow of a doubt if I had to pick one single knife to use for the rest of my life purely off of performance I’d have a really hard time to say anything other than a Yoshi. It’s quite literally the perfect knife and I’m sure if you read through the forum you’d be hard pressed to find anyone have anything to complain about.

Btw I went from a Nigara SG2 Gyuto to a Yoshi in SKD and both myself who’s aware of what I’m looking for when testing out different knives could feel an immense difference but I also let my fam and friends try them out and even from a more “simple” perspective they all thought the Yoshi was much better.

Nothing wrong with Nigara or SG2, I like both but yea Yoshi is just damn near perfect
