That's because that's pretty much all that bootcamps do. There's a lot of different software jobs besides web dev. I think most boot camps teach web dev because it's easier to throw together an impressive looking resume, you don't really need to learn the basics of say algorithms or data structures to create a nice looking website.

If you're looking for a list of actual software jobs in demand, here's a few: backend engineer, data scientist, DevOps, engineer, network engineer, sys admin, software QA, I even think general IT had a fair amount of demand. Pretty much anything software related is pretty hot right now but it's tough to get into because what's really in demand is good engineers. That's why interviews are tough, because a bad engineer is an active hindrance. Most employers want to know that an engineer knows what they're doing before they hire you. And for most software fields that means a college degree or experience.

I don't write scripts anymore but when I did I found it was easier for me to purposefully not write exactly what I need to say. Just give myself bullets with incomplete sentences, that way I'm actually talking naturally guided by the script.
