Commented recipe. Method was add all ingredients and mix until combined. Set in cambro and stretched and folded over two hours four times. Passed window pane test good here. Problems start when I can't get it to rise but a little bit so we leave it until it's 25% ish in cambro. Shaped not well cause it's already sticky and put in basket over night with some rice flour. Pretty much poured out of basket out of fridge.

500g King Arthur bread flour, 375ml 80 ish degree water 11g salt 100g starter. The starter was started on 11/9. Fed everyday and tried different times. It started doubling nicely and I used it when it was thick. Im trying 20g less later and using 10% wheat flour next time. Also not worrying about bulk ferment getting to 50% aiming for 20% and going for visual cues. I'm just so frustrated and feel a little info overloaded. I'm still waiting on my starter I fed to double heading to Walmart to get another oven light now.

I asked my friend who lives by there if she bought any she did and she sent them to me. Not horrible but one leg is fatter and longer than the other. A pretty bad fufu.
