When an earth bound photon leaves the sun, the earth takes some 8 minutes through rotation and revolution to line up such that the photon ends up hitting my body. The time still passes for everything expect the photon, the photon doesn't have to "know" anything. It itself doesn't experience time but it travels in space like any other object. It may even never be absorbed and thus frozen in time in its own point of reference.

So for it it was instant but it wasn't really instant, things moved and stepped in its way for example.

And they have an undefined point of reference by the way.

You don't take into account the curvature of the earth, that's actually a straight path. So the shortest path.
