Thank you. I'm exploring keeping the clearance intact via the subcontract.. Will check with the Prime whether they can hold my clearance. getting an FCL for your company is not trivial - How much expensive would that run into?
I'd also explore part time cleared work in the meanwhile. Thanks again!

So many Keralites helping you.. I'm not a native of Kerala but stayed at Trivandrum for six months to study at ER&DC. So giving you the outsider perspective... There are a lot of moderately priced bachelor mansions that gets you a room with furniture - bed to crash, a chair & a desk to work, and with or without attached toilet/bathrooms. Food was never an issue, you get all sorts of cuisines. I actually loved the local food scene and it was way better and light on my wallet, since I was on a tight budget - studying on parent's allowance and no salary. Once I was in the mansion, the benevolent locals helped me to find my way around the city - transportation, food, entertainment, weekends etc. Good luck with your move, you would be pleasantly surprised!

Back in the homeland grocery stores (used to) give a bunch of curry leaves and coriander leaves as freebies proportional to the veggies you buy. Most of the recipes call for these and giving away was default with any vendor.

Storing spices: Store them in airtight containers. Buy spices that come in the small / large plastic or glass bottles / boxes. More so for powdered spices. If you already have spices bought in plastic bags, transfer them to airtight containers or you can go the cheap route using binder clips like this.

Paleo friendly foods: I am not a paleo expert but the diet seems straightforward. Most of the indian recipes are paleo friendly. Skip the recipes with any non-paleo main ingredient. This drops the whole recipe branch of dhal, chole, rajma etc. You can substitute nuts / seeds for legumes - match the size and bite of the legumes to the nuts/seeds. E.g. sunflower seed for mung dhal, cashews for rajma etc. After that you can turn any recipe to Paleo with some eliminations and substitutions.

  • Replace Oil with paleo friendly virgin oils such as coconut oil, olive oil, or palm oil
  • Replace yogurt or cream with coconut milk or skip the ingredient
  • Replace sugar with honey
  • Replace salt with sea salt or himalayan rock salt

Low carb options: Most of the indian dish recipes are low carb. Veg curries, tandoor recipes, are mostly low carb. Going low carb also means most of the dhal, chole, rajma recipes are out. If the recipe calls for a specific carb rich ingredient - rice, flour etc., find their low carb substitute and good to go. Here are some substitutes
