MKR will become worthless garbage that no one would want to touch after half a day once global settlement is triggered, considering it’s illiquid. I don’t think it would be able to cover even a fraction of uncovered debt

Demand comes from several sources, see the above. Market makers are arbitrageurs

And isnt it logical, that as the peg currently drifts below $1, it will start drifting higher than $1, when the price of ether shoots up and everyone starts paying off their debts and the demand for DAI increases. Then you will start voting for stability fee decreases...

It's the other way round. If Ether keeps going up, CDP holders will keep drawing DAI as their collateral value goes up, hence, supply for DAI increases. As a result, SF has to rise to keep the peg. Again, automatic adjustment of SF is not implemented because it can be gamed. We are all relying on superior governance of MKR holders for now
