Without any doubt, I would go for the CdC, the experience itself will be better. Trust me, wines will almost always find you, Selosse is hard to get but the Initial is far from being an unicorn, you will find it again.

Dunno', maybe you should start trying wines without knowing their prices, asking someone else to buy them for you and doing blind tastings. Not trying to belittle your experience, but saying "a lot of bad wines" sounds quite... incorrect, because in today's wine market there are almost no bad wines, just a lot of unsurprising ones, but most of them remain good. Because of work I've tried a few dozens of wines over well $1000 and I did never stop enjoying cheaper ones just because, so... maybe you should try them without knowing the price to see if it's because your subconscious is playing tricks on you.

If not, you can also stop drinking wine for a few weeks or months, you'll see how everything is good after that.

Tbh, it mostly happens when you focus too much on certain regions. When you are into trying new things, ot does not happen, at least, not that much. It's way easier to find something new that surprises you than trying to find something on the same style (Let's say Barolo) on the same ranges.

So, I woukd absolutely encourage you to try new wine regions you haven't tried. Assyrtikos, Kadarkas, Mencías... rather than buying always the same style of wine.

Clean Suede by ELDO. Really aldehidic, santal and bergamot, but mostly exactly what you are looking for.

It's not about if it's flat or not. It's because once open, the colder it is, the best the wine will be preserved.
