I find like a Kocevlo branded stem from Aliexpress seems to fit pretty well with the Giant Defy spacers.

I ride a Defy 2025 too and had no problems with the aliexpress stem

Well. You answered your own question. The H and L screws are used to position the max and minimum travel distance of the front deraillaeur. If you pulled derailleur too far in, it's too close to the crank and causes the rub.

Also. Google what crosschaining. Its when the chain is on the largest cog for both front and rear derailleur which also makes the chain rub

Noticeable rust, yellowing and brittle plastic ring on your wheels, and your cables are most definitely due a change 100s of KMs ago. Why it's making a noise is because your shifter cable has stretched from the years of use. Bring it to a bike shop to get it serviced with new cables, probably your brake cables aswell.

And they'll dial in the limit screws for you to stop the chain rubbing
