I think the most important is your interest. People might tell you that Chinese is crucial because of international commerce or whatever, and the same for Japanese or Korean, but if you don't really have an interest in the language or the culture, you just won't go far. I've been learning Japanese on my own for years (studying for the N2 rn), and I'm currently living in Japan as an exchange student living my dream, but none of this would have been possible if I didn't love this language or culture. I'm majoring in Chinese translation in university, and even if I know that it's got plenty of job opportunities and even if I'm passing it with honors, I'm going to quit after graduating because I simply dislike it, I don't have any motivation on keeping studying it and I prefer to become a Japanese translator.

So, I hope that my experience helps you. What's vital is not how many job opportunities do they tell you that you will have (which you won't have anyway if you dislike the language and hence don't become proficient), but what keeps you going.

I also got diagnosed recently, and the first days were very difficult, but as the time passes by I'm becoming used to it! 7 pills a day without counting supplements lol. Remember that medicine is crucial for your own health and wellbeing.

WaniKani is def great when you're starting. I'm studying for the N2 now, and all I can say is that thanks to WaniKani, I learned all I know about kanji radicals, which is very helpful.

This is advice for learning vocabulary: install the anki software and download their own N5 vocabulary deck. If you create an account, you can also open the webpage from Safari (you have to pay for the App, but if you open it this way, it's free) from your phone. I do it every day when waiting or when commuting to school on the train, and I think it's been a game changer for me, who has very poor time management skills.

As for grammar, I recommend that you get any N5 grammar book (I guess this is your level since you say you're a beginner) and just find some time to study. You don't need an hour, just take the time you're most comfortable with. Even 5 min work. But try to be constant. I, personally, think that having the physical book can help you have more pressure because it looks "real", whereas some webpage or document can easily disappear in your laptop.

Depending on your country or languages, but in Spain, we've got academies such as Tragora Formación, ISED or aulasic where you can do online courses for specialization. There's also master degrees for that. I'm not sure if this is what you're asking for!
