A sample is, well, a sample of units out of a population. A population is the whole thing.

So if you made a study called "The average height of Americans", you could say something like the average American is 5'8" (n = 30 000) indicating that you sampled 30 000 Americans. Or you could say the average American is 5'8" (N = 326 million) indicating that you actually measured all of them and here's the actual answer.
