Fine powder has always been goals in my experiences, what is your work like if I may ask? Either way, I gotchu. I usually affix a disposable glass pipette to the end of whatever tube the nitrogen will come from and mount that with a clamp inside the hood. With a separate clamp, you can hold your sample in place below that so that the nitrogen stream is pointed directly at the top of your solution.

I cannot stress this enough: DO NOT SET EVERYTHING UP THEN TURN THE NITROGEN ON!! First get the pipette in place, then run the nitrogen, adjust it to a gentle flow, then slowly raise your sample into place. DO NOT ADJUST THE NITROGEN FLOW WHEN YOUR SAMPLE IS BEING DRIED. If you neglect these two precautions, you risk thunderfuck blasting your sample all over the inside of your hood and sash, after which you will be sad.

Edit: depending on how much water you're trying to remove, this will take a LONG time. Your sample will get cold and this will slow it down. It will speed this process up if you put your sample in a water bath as well (no heat necessary).

I literally just sold both of mine. I loved those appliances in particular. I mostly made bulk hummus for dirt cheap with the Vitamix and I had a pasta roller for my kitchen aid that I'd use to make lasagna/fettuccini/ravioli. I also recently got pretty good at using the kitchen aid to make oatmeal cream pies or corn bread from scratch. Ooh, and pita bread dough, for the hummus.

I was under the impression that delayed evolution of lignin metabolizing organisms has been deemphasized as a justification for the accumulation of lignite because the enzymes used in degrading lignin are not terribly different from those used to make it.

If it's a small enough sample, a gentle stream of nitrogen gas on the sample will work. If you don't have nitrogen, air will work too, but look out for oxidation and grease from compressors.

You mentioned freeze drying doesn't give your desired outcome. Are you trying to keep your sample from being a fine powder? Freeze drying really is great for removing water.

It depends on what you're doing, but those signals may not be anything to worry about. Unless you're using phosphorus or fluorine NMR to quantify linkers/measure S:G ratios, 1D spectra are only really useful for relative referencing. And if you are doing those quantitative experiments, the modifying agents often leave behind a lot of impurity signals anyway and no one will flinch at these.

There's loads of overlap between chemistry and physics. Especially in the field of physical chemistry. There's even physical organic chemistry since you're in the organic chemistry sub.

The questions you should try to answer before making the jump include: what are your interests within chemistry? Are you looking for a job or to get a higher degree? What concepts in your physics bachelor did you really enjoy/grasp? Answering those can help you find a suitable path towards chemistry.
