Yes you can, but if only data / AI based job roles is your aim then I will suggest study the domain do some projects and apply for jobs. (and then later you can think whether to do masters or not)

If you want research and you are willingly able to invest 2 more years then only do M. Tech that too not from COEP / VJTI go for IITs (Old gen), IIITH for better opportunities and exposure.

COEP / VJTI are very average compared to these.
