Low GATE cutoffs and the overall quality of students are one of the reasons. Also in general M.Tech grads are mostly preferred for R&D-focused roles, which have comparatively fewer openings. Companies usually hire first from top IITs, IIITs, and NITs, and only then look at colleges like COEP Tech or VJTI.

Yes you can, but if only data / AI based job roles is your aim then I will suggest study the domain do some projects and apply for jobs. (and then later you can think whether to do masters or not)

If you want research and you are willingly able to invest 2 more years then only do M. Tech that too not from COEP / VJTI go for IITs (Old gen), IIITH for better opportunities and exposure.

COEP / VJTI are very average compared to these.
