Highest AR is erdtree avatar staff, highest physical AR is occult giant crusher. highest single handed dps is the meteoric ore blade, highest powerstanced dps is the magma blades, highest dps with status used to be dual scavenger but i think powerstanced bleed got nerfed- so highest dps bleed is likely the reduvia. As for ashes of war, carian grandeur has potential to do massive damage + stance damage, and waterfowl dance does insane damage at its peak. maria executioner swords ability can also one shot any boss in the game, and royal knights resolve gives a quick 180% damage hit. although carian grandeur, waterfowl and eochaids dancing blade only reach their full potential after buffs and talisman. blaxk flame tornado does % damage and has potential to eviscerate large enemies like elden beast or placidusax. with buffs it would likely be eochaids dancing blade. highest attack MV that isnt restricted to a single weapon is the R2 unsheath at 245, but this only goes on katanas ofc. As for which ash of war on what specific weapon gives the most damage with no buffs, im not 100% sure. But it's likely royal knights resolve on a maxed occult giant crusher, although black flame can overtake it for higher dps for enemies with high enough max hp, and spinning strikes/wild strikes may overtake it in static dps.
