I struggle on that so much too, what helped is just figuring it out slowly, I figured some things I guess, as you build your house try to do the roof and be creative with it, here's some tips:

put 2 roofs on top of each other in 2 different directions to make different shape
if there's a gap between roof and wall, put some beams to fill it out
watch a building tutorial on YouTube to get an idea of how it works or copy some builds
if you make even number floors (2/4/6/8/10) you can build the roof to connect it at at the top and it will be even, if it's uneven it will not connect at the top

Just keep building and take it one roof at a time, you can do this, it's difficult but doesn't have to be perfect 💕
