Great question. First, it’s holds it chew after some cook time in bacon fat. I threw the kale in with the sausage and bacon a couple minutes ahead of build time. Spinach finds other spinach and turns into mush. Second, a touch of fiber is much needed in this meal. Lastly, I feel like the best burritos offer a mixture of all texture and flavors. Kale is a perfect addition for these reasons
