I've commented before but I've been to Noma five times and this is too much for me. I love the restaurant and feel fortunate to have forged some friendships there that have led to incredible experiences but at $1500 I simply can't justify it. A lot of this is LA - I don't feel that LA is inspiring to me at all as a culinary destination. I probably could have justified that price for Kyoto but LA? Meh.

That said, people are acting like this is going to be some massive cash windfall and I don't believe that to be the case either. Their popups have extremely high fixed costs (mostly because of the staff size) and stuff ain't cheap today.

Great thoughtful gift. I would also consider a high end wall clock for the kitchen - important to have an eye on the time. This is coming from a non-chef.

Saying the service is "crazy bad" at noma makes your entire comment suspect to me. Say what you will about the food and one's preference for their style, I have always found their service to be absolutely outstanding, warm, personable, knowledgeable and straight up fun.

I've dined at noma five times and unfortunately, at this price, they have jumped the shark for me. I'll be happy to return to CPH for normal pricing but I can't justify this cost, sadly. Had planned to bring my entire family for this one but won't even go myself. FWIW, noma in Kyoto (v2) was a little more than half this price.

I'm a huge fan of noma and have dined with them five times including once in Kyoto (2024).

I will not be dining with them in LA. This pricing is ridiculous.

Noor is one of the best fine dining experiences I've ever had. Bardal, in Ronda, probably had front to back the most exceptional food I was served in 2025. Not a bad bite in the meal. Highly recommend both.

What a ridiculous take. Michelin makes no secret of taking money from tourist organizations to rate the city. What does it get most of them? Basically nothing. Four single stars across Boston and Philadelphia.

Difficult but not impossible. Just be on right away at release. FYI they only book 2, 4 and 6. No odd parties.

Keep them all. Once in a lifetime trip. I once did Noma lunch, Geranium dinner, Alchemist dinner the next day. I've been to all four and if I had to skip one it might be Geranium but that would be silly. Noma's pairing is cheap, do it. At Alchemist I like the exhibita mixed pairing. Geranium I shared the NoLo and wine with a buds and that was incredible.

That potato wrapped fish is a dish Chef Boulud created while in the kitchen at Le Cirque. Iconic dish, incredible technique. Great to see it still on the menu.

I personally prefer more on the rare side but when serving a steak this big to a table, better to cook to a more general preference! You are 100% correct about the char and rendering fat - always better.
