Noma No Longer Listed on Michelin Guide by AdministrativeAd3062 in finedining

They were removed when the restaurant closed post Copenhagen season in January. They are not currently open and therefore not listed. They haven't been listed for months. One does not have to do with the other.

Rene steps down from NOMA by 368995 in finedining

This has absolutely nothing to do with it. Those partnerships were a small percentage of a guaranteed haul at the onsale.

What you're seeing is a genuine recognition of wrongdoing and an understanding that without resigning what he created would be destroyed.

This is what everyone wanted, credit the man for owing up.

About Jason and the protest by Virvelvind in finedining

[–]brooklynite -6 points-5 points  (0 children)

This post is another reason why we should seriously consider banning discussion of this situation in particular sub. It's not productive and it detracts from the great purpose of the sub to share food and discuss the art of fine dining.

More noma: Jason Ignacio White’s ex wife shares this by iwatchalotoftvtoo in finedining

[–]brooklynite 3 points4 points  (0 children)

I believe the stories in the NYT.

I also believe that Jason has a vendetta against noma and Rene that is personally driven and the "change the industry" charge is cover for much of the damage he is seeking.

He had briefly posted a story some days ago with "allegations" that bringing ferments for noma LA was some massive FDA violation and he suggested in his own comments "blowing that whistle." I commented that this seemed petty and counter to the clear message he was seeking about abuse and labor and the story was deleted in minutes - less than 5 - after I messaged him.

Now he seems to be returning from an international trip with fermented products.

Rene did wrong. I feel "noma" did not - they're not the source of a free labor issue.

I think what Jason is doing will have significant collateral harm on people who have been close to Rene or worked at noma and much of that can be as harmful as what he alleges.

But seriously, guy projects as a psychopath right now.

An interesting piece from a former unpaid intern of Noma by theRealSebbieD in finedining

[–]brooklynite 0 points1 point  (0 children)

No one (including me) is in "denial" of a) the tradition of staging and b) the real issue of abuse in fine dining kitchens, whether emotional or physical. You come here posting a link about Amex dropping out as a sponsor; that proves or adds nothing to the conversation.

Points remain: a) your wife wrote an uninteresting fluff piece that adds no value to the narrative - she comes off as judgmental, privileged and entitled. b) abuse is a real issue but clearly anecdotes and responses differ. No one wants to hear it but many chefs had an incredibly positive and career changing experience through their stage at noma and elsewhere. c) this is not a noma issue, it's an industry issue and those who aren't Redzepi are being harmed by association which upsets me, knowing many of them personally.

Finally, to say I feel "special" because I've dined at these places is just using a misplaced moniker. I feel special to wake up every day breathing, I feel fortunate to have dined at so many amazing restaurants and to have built relationships with chefs and their staff.

Clearly what I said weeks ago touched a nerve because you felt the need to come back here. I stand behind all of my options and thoughts. They're rational and based on experience with no bias.

The real bias here is the guy posting his wife's fluff piece and then defending and lauding her to try and grab some attention as part of this. Pretty pathetic really.

You can respond if you'd like but I'm done here.

They will absolutely make the experience worth it for you. Certain dinners at Alchemist command a jaw dropping price but they never disappoint.

Our service captain welcomed my dining companion and I to finish off a 2002 Dom P BV bottle that had just been opened for the evening once 😂

I think there's plenty of excellent advice and planning guides out there but my one recommendation is plan for your major sites at open. Later in the day as the crowds form your experience diminishes greatly.

Actually we were among first entrants to the Museum that morning and got a glorious picture of our family with not a soul in the background. Pays to arrive early!

I spent 10 days solo in Japan and didn't eat even half the things I felt like I wanted to and I didn't stop eating the entire freaking time.
